Observed heavy cream (50F - Cold Holding); shredded cheese (55F - Cold Holding), Cream sauce (66F - Cold Holding) ambient air 66F for less than four hours per person in charge. Person in charge placed all products in cooler on ice.
Manager or person in charge lacking proof of food manager certification. Observed no proof of certified manager training in truck. Person in charge had business partner email certificate during inspection.

Observed deep freezer sides hot to the touch with an ambient air temperature of 66F. Person in charge unclogged air vent on side of unit, side of unit dropped in temperature.
