Raw animal food stored over/not properly separated from ready-to-eat food. In the front line flip top cooler, the smoked salmon was stored behind the cream cheese. The smoked salmon was moved to the front.

At the front line flip top cooler, scallion cream cheese (48-38F - Cold Holding); butter (72F - Cold Holding). The scallion cream cheese was stored inside the flip top cooler over filled in the pan. The over filled portion was removed and moved to the lower cooler to chill and cold hold. The butter was stored on the counter at room temperature. The butter was stored out of refrigerator for less than 3 hours. The butter was returned to refrigeration to chill and cold hold. Neither item was prepped or portioned today.
