The over filled portion was removed and moved to the lower cooler to chill and cold hold. The butter was stored on the counter at room temperature. The butter was stored out of refrigerator for less than 3 hours. The butter was returned to refrigeration to chill and cold hold. Neither item was prepped or portioned today.
