Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed top portion of reach in cooler: guacamole with tomatoes (48F - Cold Holding); corn (58F - Cold Holding). As per employee, food items were removed from walk-in cooler less than an hour. Ambient temperature on cooler observed at 59F. Observed chicken tenders (54F - Cold Holding) inside reach in cooler across fryer station. Due to reach cooler door unable to close, ambient temperature observed at 49F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cilantro rice (111F - Hot Holding); quinoa (121F - Hot Holding); (mushrooms (122F - Hot Holding) located at steam table less than an hour. Due to double panning, advised employee to remove and reheat food items to 165F and above. Observed quinoa (167- Reheated); (mushrooms (177F - Reheated).
