Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. At kitchen, cooked pork (74F - Hot Holding). Operator stated item held out of temperature approximately 1 hour. Advised operator to reheat product to 165F.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. At kitchen reach in cooler, cooked beans (54F - Cooling)@10:10 since 6:00am, 54F @10:57; cooked rice (67F - Cooling)@10:10 since 6:00am, 67F @10:59, at the current rate, items will not reach 41F within 6 hours. Advised operator of proper cooling parameters. Operator moved items to different cooler to fascilitate cooling.
