Speed rack kitchen: cooked chicken (103F - Cooling) at 10:00 since 9:00 - 94F 10:20 At current rate of cooling product will not reach 70F within 2 hours. Operator sliced up chicken and placed into walk in cooler.

Advised operator that all in house prepared products must be marked with production date and date that product went into freezer.
