Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed salmon and octopus in ROP inside the reach-in freezer. The operator stated they do not conduct ROP in-house; however, a vacuum packaging machine used to reduce oxygen was observed on the cooking line atop the prep table.

Wiping cloth solution exceeding the maximum concentration allowed stored in a location that could result in the cross contamination of food, equipment, utensils, linens, single-service, or single-use articles. Observed sanitizer chlorine bucket at 200+ ppm. Staff prepared new solution, tested at 100 ppm.
