Observed employee crack a raw shell egg, pick a shell out of the pan and change their gloves without washing their hands. Employee then scoop cheese with their hand to add to an order of eggs. Employee washed their hands and changed their gloves.
Handwash sink used for purposes other than handwashing. Observed employee rinsing off a wash rag in the front handwashing sink. Operator informed employee to not use handwashing sinks for anything other than washing their hands.
Frozen time/temperature control for safety food being slacked at room temperature is no longer frozen solid. Observed raw beef slacking at room temperature on a speed rack. Operator placed under cold running water.

Employee has not received adequate training related to their assigned duties as evidenced by lack of general knowledge in performing their assigned duties. Observed dishwasher washing dishes in soapy water and rinse and sanitizing in same compartment with a chlorine level of 50ppm. Educated employee on correct dishwashing procedures and Senior inspector set up triple sink properly.
