Per operator food over 24 hours.

Observed a container of cheese located in the reach in cooler near cook line and the reach-in cooler near the prep pizza making station reaching 51F. Per operator, pulled cheese from walk in cooler at noon. Also observed ham (45F - Cooling); Beef Burger (46F - Cold Holding); chorizo (46F- Cold Holding); pasta (57F - Cold Holding); croquetas (48F - Cold Holding); cheese (46F - Cold Holding) inside the walk in cooler. Per operator food over 24 hours. Thermometer was reading at 58F. Stop sale issued.
