Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On the make line, observed tomato pizza sauce (66F - Cold Holding). Operator stated tomato sauce comes from a commercially packaged bag, then seasonings are added in store. Tomato sauce had been out of package with added seasonings for 3.5 hours. Discussed time as a public health control and provided DBPR time as a public health control form.
Paper towel dispenser at handwash sink not working/unable to dispense paper towels at the handwashing sink located across from the pizza make table.
