Observed chicken wings (48F - Cooling) at walk in cooler. As per manager, product was prepared on the previous day.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed cut tomatoes (58F - Cold Holding); cooked shrimp (56F - Cold Holding); cooked chicken (56F - Cold Holding) sliced turkey (52F - Cold Holding) at preparation cooler across from fryers. As per employee, since the previous day. Observed butter (46F - Cold Holding)at walk in cooler. As per manager, product was placed in the unit approximately one hour ago. The cook put the butter in the freezer for a quick chill.
