Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw chicken on shelf above pork chops in cooler in prep area. Also observed raw eggs stored above mayo.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. Emailed and printed a copy for operator.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed Mac and cheese, green beans, gravy no date marking.
