Macaroni/cheese placed into reach in cooler approximately 45 minutes prior - product was overfilled. Top part of product removed, placed into pan, and placed into reach in cooler to cool.

Person in Charge states butter is held on time, but does not have a written procedure and product was not time marked. Employee time marked item correctly.
