Observed Employee taking customer order, then handling tongs to place food in oven and serve to customers without first washing hands first.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed ham and cheese croissant held 76F - Cold Holding. Sandwiches were located on front counter at ambient temperature. Per manager sandwiches are kept on counter and served to customer when requested. Advised manager that all food must be maintained at 41°F or less. Manager removed.
Handwash sink used for purposes other than handwashing. Observed employee fill bowl with water from hand washing sink in kitchen area.

Handwash sink missing in warewashing and food preparation area. Per task form operator agreed to add but fail to comply. Must be installed before license can be given to open.
Two-compartment sink and a dishwasher used for warewashing. However, plans were approved with 3 compartment sink. Establishment needs to update plans to include changes.
