Observed temperature of main reach-in-cooler was 57F and the following items were not at cold holding temperatures, cooked chicken (57F - Cold Holding); cheese (54F). Operator move all food items to reach-in-freezer and secondary reach-in-cooler and has contacted repair service.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Observed reach-in-cooler is not keeping temperature ambient temperature 57F. Operator was in process of moving all food from reach-in-cooler to reach-in-freezer and second reach-in-cooler.
