Employee stated the ham has been stored inside the cooker for approximately two hours and moved the diced ham inside the bottom of the cooler to cool to 41F.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Employee stated the dish machine has been set up. Dish machine chlorine 0PPM. Employee primed machine, then still 0PPM. Manager replaced chlorine bucket and primed machine, then 100ppm.
Employee cracked raw shell eggs and then handled ready-to-eat food and/or clean equipment or utensils without washing hands. Employee at cookline cracked a raw shell egg with gloved hand, then touched fully cooked bacon with the same gloved hand. Employee reheated cooked bacon to 185F during this inspection. Inspector had employee wash hands and change gloves before continuing to work at cooklin.
Raw animal food stored over/not properly separated from ready-to-eat food. Open metal bowl containing raw hamburger meat stored above plastic bag containing cooked pancakes inside reach-in cooler at cookline. Employee moved pancakes away from raw hamburger meat during this inspection.
