Cutting board has cut marks and is no longer cleanable. Observed grooved cutting boards on both reach in coolers located closest to the service window on the cooks line, manager said they will get new ones soon.
Unwashed fruits/vegetables stored with ready-to-eat food. Observed bag of unwashed red onions on top of ready to eat sliced cheese in the walk in cooler, Observed unwashed produce, peppers, avocados, tomatoes, onions, peppers, over ready to eat chicken in walk in cooler, manager moved and organized items to their appropriate location.
Working containers of food removed from original container not identified by common name. Observed bottles of sauces and dressings, ranch, mayonnaise, honey mustard, thousand island, and Caesar dressing unlabeled in reach in make cooler under the service window, employee labeled all sauces and dressings appropriately.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Butter 64F at 1:44pm placed in Reach in cooler at 10:30am, retempted to 43F at 2:14pm. Operator placed in Walk in freezer for quick cooling. Shredded cheddar jack cheese 53F at 1:44pm, operator discarded.
