Observed cut lettuce (49F - Cold Holding); cut tomatoes (54F - Cold Holding); sliced cheese (50F - Cold Holding) in the center reach in cooler on the make line. Temperature log states 37F at 4AM. 62F ambient temperature at time of inspection. The operator stated the items had been held for approximately 4.5 hours. The operator discarded the potentially hazardous foods.
