Operator stated butter was placed in drawer this morning around 5a. Operator stated the plug may have come out when they moved cooler to clean under it. Operator removed butter and placed in nearby reach-in cooler to chill. Also, cut lettuce (48F - Cold Holding); sliced American cheese (50F - Cold Holding); milk (50F - Cold Holding) in walk-in-cooler. Operator stated they had a food delivery early this morning. Operator opened inner freezer door in walk in to chill foods. Observed slight ice build up on back of fan/ condenser area.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. Walk-in-cooler unable to maintain temperature of 41F and below. Ambient temperature 48-50F. Operator opened inner walk in freezer door to help chill walk-in-cooler.
