Observed employee crack shell eggs onto the grill, handled clean utensil, removed gloves and handled clean pans and utensils without washing hands. Manager coached employee and employee washed hands.
Vacuum breaker missing/incorrectly installed at mop sink faucet or on fitting/splitter added to mop sink faucet. On mop sink with added splitter, vacuum breaker installed at top of splitter. Vacuum breaker needed on non-chemical side of splitter.
Wiping cloth chlorine sanitizing solution not at proper minimum strength. Wiping cloth solution near office tested at 0ppm chlorine. Employee remade solution to 100ppm chlorine.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine tested at 10ppm chlorine.

Plumbing system in disrepair. Hand wash sink by the office has a leak at the bottom. Per operator, repair is scheduled for August 6, 2023.
Wet wiping cloth not stored in sanitizing solution between uses. Observed wet wiping cloth on prep table. Operator moved to sanitizer bucket.
