Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed employee in dish area wash and rinse food-contact container and place on drying rack. Inspector educated employee proper wash/rinse/sanitize procedure. Three compartment sink only had wash and rinse steps set up. Employee set up 3rd sink with proper quatanery ammonium sanitizer and sanitized containers.
Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. Observed missing vacuum breaker non-chemical side of hose splitter at mop sink.
Soap dispenser at handwash sink not working/unable to dispense soap. Observed soap dispenser unable to dispense soap at hand wash sink next to hot holding station by fryers.
Equipment and utensils not properly air-dried - wet nesting. Observed clear plastic containers stacked on top of each other with visible signs of moisture and unable to air dry stored on drying rack across from three compartment sink.
