Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Canadian bacon at 47F -cold holding in stainless reach in cooler at cook line. Per operator, items not prepared or portions today, items out of temperature for approximately 30 minutes. Operator voluntarily discarded.
