Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Beef (50F - Cold Holding. Manager states ground beef was placed in cooler 10 mins prior. Manager placed beef in a separate cooler to bring temperature down. Retempt 30 mins later. 52F. Manager discarded beef patties.

Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Operator states three compartment sink is currently utilized to wash, rinse and sanitize dishes.
