Employee touched ear/hair while scratching under/around order taking headset then handled clean equipment, clean utensils and unwrapped single service cups/lids and hash brown sleeves to prepare/package food/drinks for customers without washing hands. Operator discussed with employee who then washed hands.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At 2 Drawer unit left of grill; folded cooked eggs (47F - Cold Holding). Operator stated not prepared or portioned today, held in unit for less than an hour, moved to walk-in, follow up temperature 41F.
Hand wash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Hand washing sink on cook line left of grill no hot or cold running water provided. Operator stated water turned off due to sink not draining. Advised repaired during inspection, hot and cold running water provided.
