No conspicuously located ambient air temperature thermometer in holding unit. Observed no ambient air temperature thermometer in reach-in cooler holding cheese. The manager placed thermometer in reach-in cooler.

Observed operator wiping sweat off face Place gloves on without washing hands. Educated operator on proper hand washing and no touching face or cloths while engaging in food preparation.

Wiping cloth chlorine sanitizing solution not at proper minimum strength. The manager had them change out sanitizer bucket.
