Employee dried hands on clothes/apron/soiled towel after washing. Employee wiped hands on apron before putting on job to start food preparation. Stopped employee, reviewed proper handwashing, and employee rehashed hands and dried properly.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Employee handled raw burgers, removed blue gloves, and handled cooked english muffins with under gloves without washing hands first. Reviewed proper handwashing with manager and employee and employee washed hands and put on new gloves.

Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. 1) Area around back of orange juice dispensers has mold like buildup. 2) Sloped metal behind ice cream nozzle has food debris buildup. Employee cleaned she sanitized both areas.

Wiping cloth chlorine sanitizing solution not at proper minimum strength. Wiping cloth at 0ppm chlorine in kitchen. Operator remade to 100ppm chlorine.
