Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Shredded cheddar (47F - Cold Holding) In cooler at end of cook line. Other items in cooler temped 41F and below, but ambient thermometer showed 50F. May have been from having cooler door open. Operator moved all TCS food in that unit to walk in cooler to be safe until unit is serviced.
