Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm) Operator set up 3 compartment sink and will use that to warewash until dishwasher machine has been serviced and is sanitizing properly.

Cut tomatoes (64F - Cold Holding); cut lettuce (44F - Cold Holding); shredded cheese (66F - Cold Holding) Sitting out of refrigeration on makeline, establishment does not use Time as a Public Health control. Items had been taken out of cooler within last hour, and time marked to discard tomorrow. Operator moved items to freezer to rapid cool. I emailed operator Time as a Public Health Control procedures and filled out during inspection, and put fresh items out with 4 hour time stamp.
