Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed chlorine sanitizer under 50ppm on test strip at wiping cloth bucket across from office at the end of cookline. Operator replaced with new sanitizer and corrected to 100ppm.

Observed 0ppm on test strips due to empty chlorine sanitizer pellet container. Operator refilled the container with chlorine pellets, however, not registering of at least 50ppm. Operator setup 3 compartment sink with quaternary sanitizer.
Vacuum breaker in the wrong location at mop sink faucet or on fitting/splitter added to mop sink faucet. Educated the operator.
