Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Burritos 9:00am, prepared 6:30 (53F-57F - Cooling); Burritos 9:20am (53F-57F - Cooling) in walk in cooler. Burritos are wrapped in paper and stored in enclosed covered and stacked plastic containers. At this rate Burritos will not reach 41F within 4 hours. Operator placed uncovered Burrito containers next to each other in walk in freezer for rapid cooling.

Wiping cloth chlorine sanitizing solution not at proper minimum strength. Sanitizer Bucket (Chlorine 10ppm) Operator removed sanitizer bucket to be adjusted to proper strength of 50-100ppm chlorine sanitizer.

Observed employee Handling raw shell eggs, removed gloves then opened cooler drawer to retrieve more eggs without handwashing. Educated operator on proper hand washing procedures. Employee washed hands.
