At cook line, Employee touched garbage can then proceeded to prepared eggs without washing hands. Advised operator of proper hand washing. Employee washed hands and changed gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At cook line, sausage burritos (68F - Cold Holding), not prepared or portioned today. Operator stated item held out of temperature approximately 30 minutes. Advised operator of proper cold holding parameters. Employee placed item into walk in cooler for quick chill.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. cheese (57F - Cooling) at 9:45 since 9:11 - 56F at 10:06 Observed in plastic containers with tight fitted lids at reach in cooler in kitchen. At current rate of cooling product will not reach 41F within 4 hours. Operator moved to freezer to quick chill.
