No color/concentration comparison chart available for chemical test kit used to check sanitizer. Observed no concentration comparison chart for test strips quat ammonia for 3 compartment sink. Manager found new quat ammonia test strips.
No proof of required state approved employee training provided for any employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. Observed no proof of employee food handlers training from 2025, Manager not able to find taken out of binder for employee food safety training.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Checked dishmachine three times final rinse 0ppm chlorine. Recommend Manager to notify dishmachine company immediately, three compartment sink must be used wash, rinse and sanitizer.
