Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Observed employee with no gloves on scooping french fries touching her hands, educated employee on washing hands and changing gloves.

Equipment in poor repair. Observed reach in cooler in front of kitchen, the door has duct tape around the handle and is not working.

Marked exit/path to marked exit blocked. For reporting purposes only. Observed boxes and a bin of garbage blocking the back exit door with no path to get through, employee moved.

Employee handled soiled equipment or utensils and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed employee wiping dirty surfaced with sanitizer then proceed to touch fryer baskets and clean equipment without washing hands. Manager corrected employee and had them wash hands before continuing.
No paper towels or mechanical hand drying device provided at handwash sink at back of kitchen besideoffice. Manager replaced paper towels.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Observed ice bucket not inverted. Manager inverted.
Ice scoop handle in contact with ice at ice machine observed scoop buried in ice. Manager removed to dishwash.
Open dumpster lid. Manager had employee close.
Single-service articles improperly stored. Observed tea bags and tea filters stored uncovered in storage area. Manager covered.
Wet wiping cloths used for occasional spills on equipment food- and nonfood-contact surfaces not clean. Observed employee wipe out handsink with dry cloth then proceed to wipe down fryer area and top of cooler tabletop with same cloth. Manager had employee discard dry towel and wipe all areas with sanitizer.
Wiping cloth chlorine sanitizing solution not at proper minimum strength. Observed wiping cloths solution at 0 ppm. Observed that employees were making buckets with clothes heavily stored inside. Too many cloths not enough solution. Making solution on top of cloths and not storing solution. Solution read at 50 ppm when stirred and cloths moved throughly. With this solution some cloths have no chlorine on them and some have too much.
