Sliced tomatoes and shredded lettuce held on time. Stickers on product indicate a discarded time of 24 hours. Per manager wrong stickers were used. Marked correctly during inspection.

Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Wash cycle on dish machine reaching 98F according to digital gauge on wall. Data plate specifies 120F minimum.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Rehydrated onions cooling 69F when placed in walk-in, new temp 70F after 37 mins. Discussed proper cooling with manager, manager voluntarily discarded at time of inspection.
