Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Rehydrated onions cooling since approximately 7:45AM 50F at 10:40AM down to 48F at 11:20. Manager removed lids and placed onions in freezer for rapid chilling.
