Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Observed raw hamburgers over raw pork (bacon) in reach-in cooler beside cook line. Due to cooking temperature of beef is 155°F and cooking temperature of pork (bacon) is 145°F. Please refer to DBPR 5030-098 Safe Refrigerator Storage. The operator placed the raw beef in the bottom shelf in reach-in cooler.
Equipment in poor repair. Observed several reach-in cooler gasket torn.
