Condensation or other drainage not disposed of according to law. Condensation dripping from ceiling tile/vents into sanitizer compartment. Manager swapped sanitizer and wash bays. Sanitizer is now free of cross contamination from dripping water. Manager called technician to look issue
Dishmachine not washing/rinsing properly. Must wash, rinse and sanitize all dishware, equipment and utensils in three-compartment sink until dishmachine is functioning properly. Machine will not turn on. It is not in use. Manager has 3 bay sink set up and work order in place
Ice bucket not stored inverted or in a protected manner.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 2 door cooler- cheese (55F - Cold Holding); cut lettuce (55F - Cold Holding) cold holding for 1.5 hours. Manager emptied cooler. And moved to rapid chill. Now at 43f. ham (54F - Cold Holding); cooked eggs (52F - Cold Holding) 2nd temp, ham 40f. Eggs 38f In walk in cooler. Manager was able to provide proof of temperatures at 38f 2 hours ago. Items were moved to freezer to rapid chill.
Cold holding equipment not maintained in good repair. Do not store time/temperature control for safety food in this unit until the unit is repaired. 2 door reach in cooler on cooks line reading ambient 46f. Walk in cooler reading 52f. Technician is on site working on coolers at time of inspection. Observed temperatures coming down.
