Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed liquid egg (56F - Cold Holding); raw shell egg (59F - Cold Holding) stored in the reach in cooler less than 3 hours as per operator. Operator placed items in walk in cooler.
Old labels stuck to food containers after cleaning. Observed old labels on clean containers by the 3 compartment sink. Operator removed.
Reach-in cooler shelves with rust that has pitted the surface. In the prep table reach in cooler.
Wall soiled with accumulated grease, food debris, and/or dust. Observed wall by 3 compartment sink with mold like substance.

Observed ice scoop handle touching the ice in the ice machine. Operator removed.

Observed employee washing dishes change task to grabbing a roll of labels to place on an uncover container of sliced tomatoes without hand washing. Operator coached employee and employee washed hands correctly and placed gloves.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter stored in an insulated container at butter (56F - Cold Holding). As per operator, placed on the countertop 1 1/2 hours before the inspection. Operator placed inside the walk in cooler. Discussed with the operator time as a public health control and explained procedure. Provided the form.
