In-use tongs stored on equipment door handle between uses. Observed tongs stored on the oven door handles. Operator removed tongs.
Time/temperature control for safety food thawed in an improper manner. Observed commercial ROP fish and Ahi thawing in the original packaging in the walk in cooler. Product is still frozen and operator removed from packaging for thawing.
