Make table; shelled eggs ambient (55F - Cold Holding); shredded mozzarella (46F - Cold Holding); sliced ham (45F - Cold Holding); raw bacon (45F- Cold Holding) Per operator for about 3 hours. Put everything in freezer to rapid chill.
