Spoke with operator, operator split into small, metal, containers and put into ice bath to encourage proper cooling.

In Main pizza walk-in cooler: cut tomatoes (47F - cold holding); cooked onions (44F - Cold Holding); cooked spinach dip (46F - Cold Holding); ham (46F - Cold Holding); cooked pork sausage (48F - Cold Holding); cooked chicken wings (46F - Cold Holding) for one hour per operator due to door being left open during prep period. Operator spread out foods, opened connected walk-in freezer door for rapid cooling, and called technician. Also Sandwich station reach-in cooler: cooked beef meatballs (48F - Cold Holding); Swiss cheese (45F - Cold Holding) for 2 hours per operator. Operator closed and covered the unit to allow for quick cooling.
