Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish washer chlorine sanitizer 0 ppm upon multiple attempts. Final rinse water temperature at dish surface less than 160F. Operator set up a sanitizer station with metal pans deep and large enough to fully submerge all pans dishes and utensils. 200 ppm Quat. Operator made repairs during the inspection. Dishwasher -upon recheck after repairs Chlorine 100 ppm / 160F at dish surface.
