Items held on time control in server area marked for 9:30am, per server items taken out of coolers and started on time control several hours ago. Employees began to mark all items for correct times during inspection.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Under the heat lamp at the pass through window, fried chicken (121F - Hot Holding). Employee placed the fried chicken back in the fryer and reheated to over 165F.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. No bodily fluid clean up kit or written procedures available. Inspector provided written procedures.
