Stop Sale issued on time/temperature control for safety food due to temperature abuse. Observed: pork chunks at 75° next to the flat top. Multiple items of pork and beef over the flat top were below 107° hot holding.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed: pork chunks sitting next to the flat top, 75°.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed: on a rack over the flat top: pork 96,107°, beef 102,85°. ALSO, chicken on the flat top 107°. All items cook prior to opening before lunch, per the cook.

Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. Observed: no hot water was produced when the hand wash sink hot water handle was turned on for over 45 seconds. Water at 78° was Observed. ALSO, no hot water at the 3 compartment sink.
Employee eating in a food preparation or other restricted area. Observed: half eaten corn on the cob stored on the flip top reach-in cooler. ALSO, an unsealed water bottle stored on a prep table by the window.
Food stored on floor. Observed: plastic bottle water stored on the floor of the unit. ALSO, a loose lime was on the floor. And a bulk oil container was stored on the floor.
Hotel and Restaurant license decal not displayed on mobile food dispensing vehicle. Observed the decal on the service side of the truck expired 6-1-2024.
Soiled cloths, linen, aprons, coats, or other uniform apparel not kept in a suitable container prior to laundering. Observed: a soiled apron stored next to and in the hand wash sink.
