Food being cooled by nonapproved method. Observed refried beans stacked in containers 3-4 in deep, covered in plastic wrap and lids. Temped at 158f, operator stated placed in cooler 20min prior. Educated operator on proper cooling methods. Operator removed lids and unstacked containers to allow heat to escape. Also noted the temp of already cooled rice has increased to 43f because of stacking.
