Coached employee on proper procedure. Employee washed hands properly before putting gloves on at the time of inspection.
Nonexempt fish offered raw or undercooked has not undergone proper parasite destruction. Fish must be fully cooked or discarded. Observed no parasite destruction letter available.
Raw animal foods not properly separated from one another based upon minimum required cooking temperature when stored in a freezer - not all products commercially packaged. Observed raw chicken inside open plastic bag stored on top of raw french fries inside chest freezer at back storage area.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed chick stew (129F - Hot Holding) inside steam table at kitchen area. As per operator for less than 1 hour. Employee put it on top of stove to reheat during inspection.
