Raw animal foods not properly separated from each other in holding unit based upon minimum required cooking temperature. Pan containing raw chicken stored on shelf above raw beef inside walk-in cooler. Manager placed raw chicken on the bottom shelf during this inspection.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Inside reach-in cooler in kitchen near cookline: cream cheese (54F - Cold Holding); ham (55F - Cold Holding). Ham and cream cheese are filled above fill line. Manager stated the cream cheese and ham was refilled into the unit appropriately one hour prior and placed the items into the freezer to cool to 41F. After cooling: ham 41F, cream cheese 37F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Inside warming unit at far end of kitchen: pork (125F - Hot Holding). Manager stated the pork has been held inside unit for approximately 1 1/2 hours. Manager reheated the chicken to 181F during this inspection.
