Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed in the upright reach in cooler located at front counter cooked chicken (48F - Cold Holding); ham (48F - Cold Holding); cut tomatoes (48F - Cold Holding); raw eggs (48F - Cold Holding), as per operator all these food items were stored in the unit the day before and cheese (48F - Cold Holding), was stored in the cooler less than 2 hours ago. Operator was instructed to discard all the food stored in this unit from the night before and transfer the cheese o another working unit to rapidly cool down.
