Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed employee washing their hands, with the gloves on. Educated employee that gloves cannot be washed, change gloves after changing tasks and wash hand before engaging with food.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed tilapia (48F - Cold Holding) at the reach in cooler at the cookline, as per operator placed 3hours before inspection. Advised operator to place inside the reach in freezer for rapid cooling.

Designated employee eating/drinking/smoking area located in a food preparation or other restricted area causing possible cross contamination. Observed pork chops stored in the walk in cooler for employees. Advised operator to get a container or area in the walk in cooler for employees only and with label.

Observed employee washing and rinsing dish in the same compartment and placed item to dry. Educated employee how to wash, rinse and sanitize properly. Showed all employees how to prepare the 3 compartment correctly.
