Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed prep employee use sanitized wiping cloth to clean area then continued to prep potatoes. Advised chef of proper glove usage and discussed with employee and employee changed gloves.
Handwash sink not accessible for employee use at all times. Observed hand washing sink in dish machine storage area, blocked by cart. Chef removed.
Whole fruit displayed for self-service not wrapped and no utensils provided. Observed at front counter fruit display, apples not wrapped. Chef removed from line to sanitize and wrap.
Equipment and utensils not properly air-dried - wet nesting. Observed at dish washing area in main kitchen.
