Operator is not properly tracking/marking the number of days opened commercially processed, ready-to-eat, time/temperature control for safety food was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again and/or has no date mark. In reach in cooler: Mac and cheese pulled from freezer yesterday with a date mark of 9/13. Pulled pork pulled from freezer Saturday with a date mark of 9/4. Also, carrots cooked Saturday with no date mark. Also, hotdogs opened Saturday with no date mark.
